Title: Cabbage Pancakes

Yield: 4 Servings

1 Head white cabbage
2 1/2ozFlour
4flMilk, approx
4flWater, approx
1 Egg
1 Egg yolk
  Lard
1tbSalt
  Sugar
  Pepper

Chop the cabbage quite fine and salt well. Leave it in the salt till the latter has gone well through it. Brown some sifted sugar in hot lard, squeeze the cabbage well out of the brine and stew it in the lard and sugar with a little pepper until done. Make a batter of the milk, the same quantity of water, the eggs & yolk, some salt and sugar and the flour. Stir the stewed cabbage into the batter, and fry like pancakes. If the batter Is too stiff, It may be diluted with some milk.
